From the winery: Counoise can hit a ceiling for quality in the hills of West Paso Robles that is uncommon anywhere else in the world. It loves to bask in the sun deep into October while retaining low sugars and high acidity. Red fruits like fresh farmers market strawberries and raspberries are center stage, but Counoise has a deeper, almost meaty side that grounds it and reminds me a lot of Cru Beaujolais from Juliennas. We blend an equal amount of our most elegant barrels of Cinsault to add length and pillowy softness.
